Chicken Salad
Saturday, July 04, 2020Well, this is my take on chicken salad.
Ingredients
1 roasted chicken - shredded
or you can also boil 3 halves of chicken breasts with salt and pepper then shred it.
1 + 1/2 cups of chopped celery (small cubes)
3/4 cup of fine chopped parsley (not too big)
1/2 cup of chopped green onions (or 1/4 or an onion)
1/4 cup chopped walnuts (optional)
1 + 1/2 cup of real mayonnaise
1/2 cup cream (can be sour cream, and for Brazilians creme de leite de caixinha)
1 tb of olive oil
salt and black pepper to taste
sweet green or sweet black grapes chopped in half.
Steps
Mix the mayonnaise with the cream and the olive oil.
Add the salt, pepper, walnuts, green onions, parsley and celery and mix the base.
Then add the chicken and mix well.
Add the grapes and mix slowly, trying not to brake the valves too much.
Let it sit in the fridge for 10 minutes before serving.
The best way to eat this salad is on top of a bed of cut lettuce and add potato chips on the side.
If you are not going to eat it all in one sitting, don't add the grapes or it will become watery.
Just have the whole grapes on the side as you eat the salad. (Like you can't see them on the photo)
You can also add cranberry to it, or raisins. About 1/4 of a cup, if you don't have grapes.
